4 cornish game hens
1 cup. CHAUCER’S Blackberry Wine
1/2 tsp. garlic (minced)
1/2 tsp. shallots (minced)
1/2 cup. frozen or fresh blackberries
1/2 tsp. lemon zest
2 Tbsp. honey
1/4 tsp. vanilla extract
2 Tbsp. Canola oil
- Reduce blackberry wine, garlic and shallots by half in a medium saucepan over medium high heat.
Add blackberries, lemon zest, honey and vanilla. S&P to taste. Reduce until thickened.
Salt and pepper both sides of hens
Heat large skillet over medium high heat. Add oil to pan.
When hot, add hens breast side down. Lower heat to medium. Sear until golden brown.
Turn hens over and sear another 5 min.
Place hens on sheet pan in 350 degree oven for 20 minutes.
Remove from oven when done.
Plate and ladle blackberry sauce over each one.
Serve with green beans and mashed potatoes. Serves 4.
